🍰 St. Louis-Style Gooey Butter Cake

This gooey, sweet, and buttery classic starts with a yellow cake mix and finishes with cream cheese decadence. Bake it the day before — it gets even better with time.


🧂 Ingredients

For the Crust:

  • 1 (18.25 oz) box yellow cake mix
  • ½ cup butter, melted
  • 2 eggs
  • 1 tsp vanilla extract

For the Filling:

  • 1 (8 oz) package cream cheese, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 cups confectioners’ sugar (or 3 cups for less sweetness)

🍽 Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, combine cake mix, melted butter, vanilla, and eggs. Mix by hand until combined.
  3. Press crust mixture into a greased 9×13″ pan.
  4. In another bowl, beat cream cheese, eggs, and vanilla with a mixer until smooth.
  5. Slowly add confectioners’ sugar while mixing.
  6. Pour the filling evenly over the crust.
  7. Bake for 40–45 minutes until lightly golden (don’t overbake — center should be gooey).
  8. Cool completely before slicing.

💡 Tips from the Family:

  • Reduce sugar to 3 cups if preferred
  • Bake at 325°F for a softer texture
  • Best when made a day ahead
