🍰 St. Louis-Style Gooey Butter Cake

This gooey, sweet, and buttery classic starts with a yellow cake mix and finishes with cream cheese decadence. Bake it the day before — it gets even better with time.
🧂 Ingredients
For the Crust:
- 1 (18.25 oz) box yellow cake mix
- ½ cup butter, melted
- 2 eggs
- 1 tsp vanilla extract
For the Filling:
- 1 (8 oz) package cream cheese, softened
- 2 eggs
- 1 tsp vanilla extract
- 4 cups confectioners’ sugar (or 3 cups for less sweetness)
🍽 Instructions
- Preheat oven to 350°F.
- In a bowl, combine cake mix, melted butter, vanilla, and eggs. Mix by hand until combined.
- Press crust mixture into a greased 9×13″ pan.
- In another bowl, beat cream cheese, eggs, and vanilla with a mixer until smooth.
- Slowly add confectioners’ sugar while mixing.
- Pour the filling evenly over the crust.
- Bake for 40–45 minutes until lightly golden (don’t overbake — center should be gooey).
- Cool completely before slicing.
💡 Tips from the Family:
- Reduce sugar to 3 cups if preferred
- Bake at 325°F for a softer texture
