🥣 Black Bean Soup

A rich, hearty soup made with black beans, salsa, lime, and spices — quick to prepare and full of flavor.


Ingredients

  • 1 medium onion, chopped
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 3 cans (16 oz each) black beans
  • 16 oz chicken broth
  • 2 garlic cloves, pressed
  • 3 cups chunky salsa (mild, medium, or hot to taste)
  • 1 small lime (juice and grated rind)
  • Chopped cilantro, to taste
  • Sour cream or plain yogurt, for serving

Instructions

  1. In a 4-qt pot, cook onion in oil until tender. Remove from heat.
  2. Puree 2 cans of beans (with liquid) in batches with chicken broth. Add to pot.
  3. Puree 2 cups salsa with pressed garlic; add to pot.
  4. Stir in remaining beans, salsa, cilantro, lime juice, and rind.
  5. Heat to boiling, reduce to low, and simmer 30 minutes.
  6. Serve hot with a dollop of sour cream or yogurt.
