🥣 Black Bean Soup
A rich, hearty soup made with black beans, salsa, lime, and spices — quick to prepare and full of flavor.
Ingredients
- 1 medium onion, chopped
- 1 tbsp olive oil
- 1 tsp cumin
- 3 cans (16 oz each) black beans
- 16 oz chicken broth
- 2 garlic cloves, pressed
- 3 cups chunky salsa (mild, medium, or hot to taste)
- 1 small lime (juice and grated rind)
- Chopped cilantro, to taste
- Sour cream or plain yogurt, for serving
Instructions
- In a 4-qt pot, cook onion in oil until tender. Remove from heat.
- Puree 2 cans of beans (with liquid) in batches with chicken broth. Add to pot.
- Puree 2 cups salsa with pressed garlic; add to pot.
- Stir in remaining beans, salsa, cilantro, lime juice, and rind.
- Heat to boiling, reduce to low, and simmer 30 minutes.
- Serve hot with a dollop of sour cream or yogurt.
